Brebirousse d'Argental is a soft ripened bloomy rind sheep’s milk cheese with a distinctive soft orange rind. The orange colour is not due to rind washing, as is the case with most orange rinded cheeses, it comes from annato being sprinkled onto the cheese during maturation. The runny, creamy paste is buttery sweet with a hint of salt, grassiness, mild mushroom flavour and with a full gamey tang.
